Snack Time!
I'm always on the hunt for healthy, satisfying snacks. It is so hard to pick out snacks in-store that are good for you and easy to eat. The easiest things to grab are always the chips, cheese crackers, candy and other unhealthy items. Even granola bars are packed with hidden sugars.
Over the summer, I went to Oak Island with my family. One of my cousins had this recipe for peanut butter balls. She was raving about them. You could tell she was really looking forward to making these and sharing them with us. I was pretty excited to try them myself because she said they were made with healthy ingredients. She also said they were super easy to make.
On the night she made them, I watched as she just threw a few ingredients into a bowl and combined them. Next, you simply take those ingredients, roll them up, and store them in the fridge. It only took her about 15-20 minutes to finish everything. She passed one of the peanut butter balls to me and I took my first bite. I was hooked.
These sweet treats are fulfilling, tasty and good for you! I just couldn't believe how filling they were. I only need two to feel full. They are packed with protein and fiber. Don't worry! I'm gonna share the recipe with you guys at the end of this post because I know you're going to want them.
I went home after that beach trip and immediately went to Walmart and tried to find all of the ingredients. Since this recipe only calls for 5 ingredients, it didn't take long to gather them up. I was so excited to make these peanut butter balls again. When I left for my senior year, I made sure I had all of the ingredients with me so that I could keep making them every week.
I let my roommates try these peanut butter balls too, and they are obsessed. They've already planned to buy the next batch of ingredients. Everyone who has tried these peanut butter balls ends up loving them.
So finally, here is the recipe. I hope you enjoy them as much as I do!
Ingredients:
2/3 Cup of Peanut Butter
2 Tbsp of Honey
1/2 Cup of Chocolate Chips
1/2 Cup of Ground Flaxseed
1 Cup Quick oats
Steps:
Simply mix everything in a bowl until well-combined. Roll into one inch balls and eat immediately or put in the fridge for later. (I typically enjoy them better after they've been in the fridge.)
